Garlic is known as ‘Bawang Putih’ in Malay and ‘蒜头’ in Chinese, and is closely related to the chives, onions, leeks and shallots. It is found in practically every type of cuisine but garlic's popularity seems to be greatest in Central and South American, Chinese, Indian, Mediterranean, Mexican and Southeast Asian cuisine. As any good home chef knows, nothing compares to fresh garlic, but that doesn't mean that dehydrated garlic shouldn't play a vital role in your kitchen. Having dehydrated garlic around is essential. Not only is it a wonderful flavoring agent, but this garlic doesn’t spoil. Using dehydrated garlic saves time by eliminating peeling, saves your hands from smelling and your eyes from tearing. 

Granulated garlic is prepared in the same way as garlic powder. While both products are made from garlic that's been chopped, dehydrated, and ground, granulated garlic has a coarser texture, like cornmeal, while garlic powder is ground until it has a fine texture like flour.

Granulated garlic, on the other hand, combines better with liquids, making it the right choice for recipes like salad dressing, sauces, soups, and stews. It's also a better choice when using a blend of spices, because its coarse texture lets it mix more easily with other spices, while garlic powder is so fine it's hard to mix it with other spices evenly.
